Dr. Schwarcz: I recently read an article from the Office for Science and Society on Milk, Hormones and Cancer. There were some errors in the discussion that I wished to correct. First, the most abundant estrogen in cow's milk is estrone sulfate. It is a water soluble estrogen and is most plentiful in fat free and skim milk and their derivatives. When consumed, it is deconjugated and converted into estrone . Estrone further induces a cytochrome p450 enzyme known as CYP1B1. CYB1B1 converts estrone into 16-alpha hydroxyestrone. This is a very dangerous estrogen that is both pro-inflammatory and carcinogenic. Encouraging people to believe that milk is safe and that skim or fat free milk is free of estrogens is both incorrect and dangerous.-Robert D. Bibb, M.D. Author of Deadly Dairy Deception.
